Sheepshead
Also called: Convict Fish
Sheepshead are the striped, human-toothed bandits of the dock pilings and bridges — masters at stealing bait. Catching them takes a sharp eye and a quick hookset.
They school up thick around structure in the cooler months, and the reward is some of the sweetest fillets in the Gulf.
